Ingredients
- 300g Rump steak trimmed of all fat
- 160ml Vegetable stock
- 3 tbsp Soy sauce
- 5 tbsp Mirin
- 1 tbsp Golden caster sugar
- 1 x Large onion sliced
- Salt and pepper
- ½ tbsp Chopped pickled ginger
- 4 x Spring onions finely sliced
- 1 x Red chilli finely sliced
- Steamed rice to serve

Quick to make, healthy and perfect as a mid week meal.Method
- Put the meat into the freezer while you prepare the other ingredients (this will help when slicing).
- Combine the stock, soy, mirin and sugar in a pan, bring to the boil, then turn down to a simmer.
- Add the onion and cook for 5 minutes.
- Meanwhile, slice the meat as thinly as you can, add the beef to the pan and cook for a few minutes, stirring, until opaque.
- Serve over steamed rice with a sprinkle of the pickled ginger, spring onion and chilli.
