Ingredients
- 500gram green tomatoes
- 400gram finely diced red onion
- 250gram golden raisins
- 200 gram soft brown sugar
- 2 red chillies de-seeded and finely diced
- White wine vinegar x 200ml
- 1tsp ground mixed spice
- 1tsp ground ginger
Introduction
Best served with cold roast hams or hard British cheeses.Method
- Simply chop tomatoes keeping all seeds and juices
- Add all ingredients to a heavy bottomed saucepan
- Bring to simmer stirring frequently
- Reduce heat to medium and cook till thickened and syrupy
- Store in sterilised jars for up to a month
