Method
- Pre heat the oven to 185°C.
- Lay the bones cut side up on a heavy baking tray, if they wont sit straight nestle them into some rock salt.
- Sprinkle lightly with sea salt flakes and roast for 15 minutes until the marrow is piping hot melting.
- Many alternatives work great ranging from a simple parsley garlic crumb scattered over the marrow pre baking to my favourite, a mix of diced shallot anchovy, lots of chopped parsley a soft brioche crumb all seasoned with cracked pepper then baked on top of the marrow.
